Slow Cooker Irish Chicken Stew
A hearty, comforting one-pot meal with tender chicken, potatoes, carrots, and a rich savory broth.
Ingredients
- 600–800g chicken breast or chicken thighs (cut into chunks)
- 3–4 potatoes (peeled & chopped into chunks)
- 3 carrots (sliced thick)
- 2 celery stalks (optional but recommended)
- 1 onion (chopped)
- 2–3 garlic cloves (minced)
- 3–4 cups chicken stock (about 700–900 ml)
- 1 tbsp tomato paste (optional but adds depth)
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1–2 bay leaves
- Salt & black pepper to taste
- 1 tbsp olive oil (optional for extra flavor)
- 1 cup peas (optional, added at the end)
Instructions
1. Prep the base
Add potatoes, carrots, celery, onion, and garlic into the slow cooker.
2. Add chicken
Place the chicken pieces on top of the vegetables.
3. Season it
Add salt, pepper, thyme, rosemary, and bay leaves.
4. Pour liquid
Mix chicken stock with tomato paste (if using), then pour over everything.
5. Slow cook
- LOW: 7–8 hours
- HIGH: 4–5 hours
Cook until chicken is tender and vegetables are soft.
6. Final touch
- Remove bay leaves
- Shred chicken slightly if you want a thicker texture
- Add peas in the last 15–20 minutes
