Slow Cooker Garlic Parmesan Chicken
Ingredients:
- 4 boneless, skinless chicken breasts (or thighs for extra juiciness)
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- Salt and black pepper, to taste
- 2 tablespoons butter
- 1 tablespoon olive oil
- Optional: 1/2 teaspoon red pepper flakes (for a little heat)
- Fresh parsley, chopped (for garnish)
Instructions:
- Prep the Chicken:
Season the chicken with salt, pepper, paprika, and Italian seasoning on both sides. - Sear for Flavor (Optional but recommended):
In a skillet over medium heat, add olive oil and butter. Sear the chicken for 2–3 minutes per side until lightly golden. This adds extra flavor but you can skip if you’re short on time. - Make the Sauce:
In a bowl, whisk together heavy cream, chicken broth, minced garlic, and Parmesan cheese. - Slow Cook:
Place the chicken in the slow cooker and pour the sauce over it.
Cover and cook:- Low: 5–6 hours
- High: 2.5–3 hours
- Finish & Thicken:
Once cooked, remove the chicken. If you want a thicker sauce, leave the lid off and cook on HIGH for another 15–20 minutes or stir in a slurry (1 tsp cornstarch + 1 tbsp water). - Serve:
Return chicken to the sauce, spoon over generously, and garnish with fresh parsley.
Serving Ideas:
- Over pasta (fettuccine or penne )
- With mashed potatoes
- Over rice or cauliflower rice
- With steamed veggies like broccoli or green beans
Tips:
- Use freshly grated Parmesan for the best melt and flavor (pre-grated can be grainy).
- Add mushrooms or spinach for extra texture and nutrition.
- Want it keto? Serve over zucchini noodles or keep it as-is!
