Creamy Spinach Parmesan Baked Chicken
A rich, comforting, and weeknight-easy dinner with juicy chicken baked in a velvety spinach-Parmesan cream sauce.
Ingredients
- 4 boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 1 tsp paprika
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup fresh spinach, chopped
- 1/2 cup grated Parmesan cheese
- 1/2 tsp Italian seasoning
- 1/2 cup shredded mozzarella cheese
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Season chicken with salt, pepper, and paprika on both sides.
- Heat olive oil in a skillet over medium heat. Sear chicken 2–3 minutes per side until lightly golden (not fully cooked). Remove and set aside.
- In the same skillet, sauté garlic 30 seconds until fragrant.
- Add heavy cream and chicken broth. Simmer 3–4 minutes.
- Stir in spinach, Parmesan, and Italian seasoning. Cook until spinach wilts and sauce thickens slightly.
- Place chicken in the baking dish. Pour the creamy spinach sauce over the top.
- Sprinkle mozzarella evenly over everything.
- Bake 20–25 minutes until chicken is cooked through and cheese is bubbly and golden.
- Rest 5 minutes before serving.
Tips
- Pound thicker breasts for even cooking.
- Add mushrooms or sun-dried tomatoes for extra flavor.
- Serve with rice, pasta, or mashed potatoes to soak up the sauce.
