Loaded Cheesy Pocket Tacos: The Ultimate Crispy, Melty Handheld Delight
Crispy on the outside, gooey and cheesy on the inside, and packed with bold taco flavor in every bite — these pocket tacos are the kind of meal that disappears from the plate in minutes. Perfect for busy weeknights, game nights, or anytime you want something handheld, satisfying, and seriously delicious.
Ingredients
- 8 small flour tortillas
- 1 lb (450 g) ground beef
- 1 packet taco seasoning
- ½ cup water
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- ½ cup sour cream
- ½ cup diced tomatoes
- ¼ cup chopped green onions
- 2 tbsp oil or melted butter (for brushing)
Instructions
- Cook the beef
In a skillet over medium heat, cook the ground beef until browned. Drain excess fat. Add taco seasoning and water, then simmer for 3–4 minutes until thickened. - Fill the tortillas
Lay a tortilla flat. Add a spoonful of the seasoned beef to the center. Top with cheddar and mozzarella. - Fold into pockets
Fold the sides inward, then fold up from the bottom to form a sealed pocket. - Brush and crisp
Brush both sides lightly with oil or melted butter. - Cook until golden
Heat a pan over medium heat. Place the pockets seam-side down and cook for 2–3 minutes per side until golden brown and crispy, and the cheese is melted inside. - Load them up
Let cool slightly, then top with sour cream, diced tomatoes, and green onions.
Serving Tips
- Serve with salsa, guacamole, or hot sauce for extra flavor.
- These also crisp beautifully in an air fryer at 375°F (190°C) for 6–8 minutes.
