Ingredients:

4 cups cucumbers (finely chopped)

1 cup onion (finely chopped)

1/2 cup green bell pepper (finely chopped)

1 tbsp salt

1 cup granulated sugar

3/4 cup apple cider vinegar

1/2 tsp turmeric

1 tsp mustard seeds

1/2 tsp celery seeds

Instructions:

1. In a large bowl, combine chopped cucumbers, onion, and bell pepper.

2. Sprinkle with salt, mix well, and let sit for 1 hour to draw out moisture.

3. Drain thoroughly and squeeze out excess liquid.

4. In a saucepan, combine sugar, apple cider vinegar, turmeric, mustard seeds, and celery seeds.

5. Bring to a gentle boil, stirring until sugar dissolves.

6. Add drained vegetable mixture to the saucepan.

7. Simmer for 10–15 minutes until slightly softened but still crisp.

8. Remove from heat and let cool.

9. Transfer to jars and refrigerate until chilled and ready to serve.

Pro Tip:

For extra crunch, soak the chopped cucumbers in ice water for 30 minutes before salting—this keeps them nice and crisp
