Date Crumble Bars (Chewy & Nostalgic)
Ingredients:
For the crust & topping:
- 1 cup all-purpose flour
- 1 cup rolled oats
- 3/4 cup brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup butter, melted
For the filling:
- 2 cups chopped dates
- 3/4 cup water
- 1 tablespoon lemon juice
- 1/2 cup chopped walnuts (optional)
Instructions:
- Preheat oven to 180°C (350°F). Grease a square baking pan (8×8 inch).
- In a saucepan, combine dates and water. Cook over medium heat until soft and thick (about 5–10 minutes). Stir in lemon juice and nuts, then let cool.
- In a bowl, mix flour, oats, brown sugar, baking soda, and salt.
- Add melted butter and mix until crumbly.
- Press half of the mixture into the pan to form the base.
- Spread the date filling evenly over the base.
- Sprinkle the remaining crumb mixture on top.
- Bake for 25–30 minutes until golden brown.
- Let cool completely, then cut into squares.
