 Puff Pastry Spinach & Cheese Triangles

Crispy, golden puff pastry filled with a savory spinach and melted cheese mixture — perfect for breakfast, snacks, or guests.

 Ingredients

  • 1 sheet puff pastry, thawed
  • 500 g (1 lb) fresh spinach
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 150 g (1½ cups) shredded mozzarella (or any melting cheese)
  • 100 g (½ cup) feta cheese, crumbled (optional but recommended)
  • Salt, to taste
  • Black pepper, to taste
  • A pinch of turmeric (optional)
  • 1 egg, for brushing
  • Dried thyme or sesame seeds, for topping

 Instructions

1) Cook the filling

  1. Heat olive oil in a pan over medium heat.
  2. Add the onion and garlic; sauté until soft.
  3. Add the spinach and cook until fully wilted and most of the moisture evaporates.
  4. Season with salt, pepper, and turmeric.
  5. Remove from heat and let it cool slightly.
  6. Stir in the mozzarella and feta

Important: The filling must be dry, not watery, so the pastry stays crisp.

2 Shape the pastries

  1. Roll out the puff pastry sheet on a flat surface.
  2. Spoon the spinach mixture in a line along the center.
  3. Fold the pastry over the filling to form a long roll.
  4. Cut into triangle pieces, like in the photo.

3 Bake

  1. Place the triangles on a baking tray lined with parchment paper.
  2. Brush the tops with beaten egg.
  3. Sprinkle with thyme or sesame seeds.
  4. Bake in a preheated oven at 180°C (350°F) for 20–25 minutes, until puffed and golden brown.

 Result

Flaky on the outside, cheesy and flavorful on the inside — absolutely delicious warm or at room temperature.
