Puff Pastry Spinach & Cheese Triangles
Crispy, golden puff pastry filled with a savory spinach and melted cheese mixture — perfect for breakfast, snacks, or guests.
Ingredients
- 1 sheet puff pastry, thawed
- 500 g (1 lb) fresh spinach
- 1 small onion, finely chopped
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 150 g (1½ cups) shredded mozzarella (or any melting cheese)
- 100 g (½ cup) feta cheese, crumbled (optional but recommended)
- Salt, to taste
- Black pepper, to taste
- A pinch of turmeric (optional)
- 1 egg, for brushing
- Dried thyme or sesame seeds, for topping
Instructions
1) Cook the filling
- Heat olive oil in a pan over medium heat.
- Add the onion and garlic; sauté until soft.
- Add the spinach and cook until fully wilted and most of the moisture evaporates.
- Season with salt, pepper, and turmeric.
- Remove from heat and let it cool slightly.
- Stir in the mozzarella and feta
Important: The filling must be dry, not watery, so the pastry stays crisp.
2 Shape the pastries
- Roll out the puff pastry sheet on a flat surface.
- Spoon the spinach mixture in a line along the center.
- Fold the pastry over the filling to form a long roll.
- Cut into triangle pieces, like in the photo.
3 Bake
- Place the triangles on a baking tray lined with parchment paper.
- Brush the tops with beaten egg.
- Sprinkle with thyme or sesame seeds.
- Bake in a preheated oven at 180°C (350°F) for 20–25 minutes, until puffed and golden brown.
Result
Flaky on the outside, cheesy and flavorful on the inside — absolutely delicious warm or at room temperature.
