 The Ultimate Slow Cooker Amish Beef and Corn Casserole

 Ingredients

  • 1 lb (450 g) ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced (optional but recommended)
  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (15 oz) cream-style corn
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 2 cups frozen diced potatoes (or hash browns)
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional)

 Instructions

  1. Brown the beef
    • In a pan, cook ground beef with onion and garlic until fully browned.
    • Drain excess fat.
  2. Load the slow cooker
    • Add cooked beef mixture into the slow cooker.
    • Add corn, cream corn, cream of mushroom soup, sour cream, potatoes, salt, pepper, and paprika.
  3. Mix well
    • Stir everything until evenly combined.
  4. Slow cook
    • Cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  5. Add cheese
    • In the last 20–30 minutes, stir in shredded cheddar cheese.
    • Let it melt into the casserole.
  6. Serve
    • Serve warm, optionally topped with extra cheese or chopped parsley.

 What it tastes like

Creamy, cheesy, slightly sweet from the corn, and super hearty — like a mix between a beef casserole and a cozy potato corn chowder.
