Keto Game Day Deli Stromboli

 Keto “Game Day” Deli Stromboli (Fathead Crust)

When a pizzeria stromboli goes keto… and nobody complains. Golden, garlic-buttered fathead crust, crispy edges, and layers of melty cheese with deli meats rolled tight and baked to perfection.

 Ingredients

For the fathead dough

  • 1½ cups shredded mozzarella
  • 2 tbsp cream cheese
  • ¾ cup almond flour
  • 1 egg
  • ½ tsp garlic powder
  • Pinch of salt

For the filling

  • 6–8 slices mozzarella cheese
  • 6 slices ham
  • 10–12 slices pepperoni
  • 8 slices salami

Topping

  • 2 tbsp melted butter
  • ½ tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 tbsp grated parmesan (optional)

 Instructions

  1. Preheat oven to 200°C (400°F). Line a tray with parchment paper.
  2. Make the dough (fathead method)
    In a microwave-safe bowl, combine shredded mozzarella and cream cheese. Microwave 60–90 seconds until melted. Stir until smooth.
  3. Add almond flour, egg, garlic powder, and salt. Mix, then knead with your hands until a soft dough forms.
  4. Place the dough between two sheets of parchment and roll into a rectangle (about ¼-inch thick).
  5. Layer the fillings
    Add mozzarella slices first, then ham, pepperoni, and salami. Leave a small border around the edges.
  6. Roll it up tightly like a jelly roll. Pinch the seams and tuck the ends under.
  7. Brush the top with melted butter mixed with garlic powder and Italian seasoning. Sprinkle parmesan on top.
  8. Bake for 15–20 minutes, until deep golden brown.
  9. Let rest 5 minutes before slicing (so the cheese doesn’t run out too fast).

 Slice & Serve

Cut into thick slices and serve warm. Perfect for game day, parties, or a keto comfort-food craving.
