 Golden Chicken Meatballs with Whipped Feta, Roasted Tomatoes & Garlic Basil Oil

Ingredients

For the Golden Chicken Meatballs:

  • 1 lb ground chicken (preferably dark meat for moisture)
  • 1/2 cup panko breadcrumbs
  • 1 large egg (beaten)
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tbsp fresh parsley (chopped)
  • 1 tbsp olive oil (for browning)

For the Roasted Tomatoes:

  • 2 cups cherry tomatoes
  • 2 tbsp olive oil
  • 2 cloves garlic (smashed)
  • Salt & pepper

For the Whipped Feta:

  • 6 oz feta cheese
  • 1/4 cup Greek yogurt
  • 1 tbsp olive oil
  • 1 tsp lemon juice

For the Garlic Basil Oil:

  • 1/3 cup olive oil
  • 3 cloves garlic (thinly sliced)
  • 1/2 cup fresh basil leaves
  • Pinch of chili flakes (optional)

 Instructions

1. Roast the tomatoes

  • Preheat oven to 400°F (200°C).
  • Toss cherry tomatoes with olive oil, garlic, salt, and pepper.
  • Roast for 20–25 minutes until blistered and juicy.

2. Make the meatballs

  • Mix ground chicken, panko, egg, Parmesan, garlic, salt, pepper, paprika, and parsley.
  • Form into small meatballs.
  • Heat olive oil in a pan and brown meatballs on all sides.
  • Transfer to oven and bake at 400°F for 10–12 minutes until cooked through.

3. Whip the feta

  • Blend feta, Greek yogurt, olive oil, and lemon juice until smooth and creamy.
  • Set aside.

4. Make garlic basil oil

  • Heat olive oil gently in a pan.
  • Add garlic slices and cook until lightly golden.
  • Remove from heat, then add basil and chili flakes.

 To serve

  • Spread whipped feta on a plate or bowl.
  • Add roasted tomatoes.
  • Top with golden chicken meatballs.
  • Drizzle generously with garlic basil oil.
