Golden Chicken Meatballs with Whipped Feta, Roasted Tomatoes & Garlic Basil Oil
Ingredients
For the Golden Chicken Meatballs:
- 1 lb ground chicken (preferably dark meat for moisture)
- 1/2 cup panko breadcrumbs
- 1 large egg (beaten)
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic (minced)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tbsp fresh parsley (chopped)
- 1 tbsp olive oil (for browning)
For the Roasted Tomatoes:
- 2 cups cherry tomatoes
- 2 tbsp olive oil
- 2 cloves garlic (smashed)
- Salt & pepper
For the Whipped Feta:
- 6 oz feta cheese
- 1/4 cup Greek yogurt
- 1 tbsp olive oil
- 1 tsp lemon juice
For the Garlic Basil Oil:
- 1/3 cup olive oil
- 3 cloves garlic (thinly sliced)
- 1/2 cup fresh basil leaves
- Pinch of chili flakes (optional)
Instructions
1. Roast the tomatoes
- Preheat oven to 400°F (200°C).
- Toss cherry tomatoes with olive oil, garlic, salt, and pepper.
- Roast for 20–25 minutes until blistered and juicy.
2. Make the meatballs
- Mix ground chicken, panko, egg, Parmesan, garlic, salt, pepper, paprika, and parsley.
- Form into small meatballs.
- Heat olive oil in a pan and brown meatballs on all sides.
- Transfer to oven and bake at 400°F for 10–12 minutes until cooked through.
3. Whip the feta
- Blend feta, Greek yogurt, olive oil, and lemon juice until smooth and creamy.
- Set aside.
4. Make garlic basil oil
- Heat olive oil gently in a pan.
- Add garlic slices and cook until lightly golden.
- Remove from heat, then add basil and chili flakes.
To serve
- Spread whipped feta on a plate or bowl.
- Add roasted tomatoes.
- Top with golden chicken meatballs.
- Drizzle generously with garlic basil oil.
