 Pumpkin Spice Crumb Cake

 Ingredients

 Cake Batter

  • 1 1/4 cups pumpkin purée
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 2 tbsp sour cream (optional but makes it moist)
  • 1 1/4 cups all-purpose flour
  • 2 tsp pumpkin spice (or mix cinnamon, nutmeg, ginger, cloves)
  • 3/4 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp salt

Pumpkin and warm spices like cinnamon, nutmeg, and cloves give the cake its classic fall flavor.

 Crumb Topping (Streusel)

  • 1 cup all-purpose flour
  • 3/4 cup brown sugar
  • 2 tbsp white sugar
  • 1 tsp pumpkin spice
  • 6 tbsp melted butter

 Optional Glaze

  • 1/2 cup powdered sugar
  • 2–3 tbsp milk

 Instructions

1. Preheat

  • Heat oven to 180°C (350°F)
  • Grease or line a 20×20 cm (9×9 inch) pan

2. Make the Batter

  1. In a bowl, mix melted butter + sugars
  2. Add eggs → mix well
  3. Add pumpkin purée + vanilla + sour cream
  4. In another bowl, whisk flour, spices, baking powder, baking soda, salt
  5. Combine dry ingredients into wet (don’t overmix!)

3. Prepare Crumb Topping

  • Mix flour, sugars, and spice
  • Add melted butter and mix until crumbly

4. Assemble

  • Pour batter into pan
  • Sprinkle crumb topping evenly on top

5. Bake

  • Bake 45–60 minutes
  • Cake is done when a toothpick comes out clean

6. Cool & Serve

  • Let cool before cutting
  • Drizzle glaze if desired

 Tips

  • Don’t overmix → keeps cake soft
  • Let it cool fully → crumb sets better
  • Even better the next day (more moist!)
