Mini Muffin Quiche Cups

light, easy, and perfect for breakfast or a snack.

 Ingredients

  • 6 eggs
  • 1 cup milk
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup chopped green onions
  • 1/2 cup diced bell pepper (any color)
  • A little chopped parsley or cilantro
  • Salt and black pepper to taste
  • A bit of oil to grease the pan
  • Optional add-ins: shredded chicken, cooked ground beef, tuna, mushrooms… your choice.

 Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Lightly grease a muffin tin with oil.
  3. Fill each cup with vegetables and cheese (and any extras you like).
  4. Whisk the eggs with milk, salt, pepper, and herbs.
  5. Pour the egg mixture into each cup until filled.
  6. Bake for 18–22 minutes until set and lightly golden on top.
  7. Let cool slightly, then remove from the pan.

 Tips

  • Make them the night before and reheat in the morning.
  • Delicious warm or cold.
  • Great for a healthy, protein-rich meal.
