Mini Muffin Quiche Cups
light, easy, and perfect for breakfast or a snack.
Ingredients
- 6 eggs
- 1 cup milk
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup chopped green onions
- 1/2 cup diced bell pepper (any color)
- A little chopped parsley or cilantro
- Salt and black pepper to taste
- A bit of oil to grease the pan
- Optional add-ins: shredded chicken, cooked ground beef, tuna, mushrooms… your choice.
Instructions
- Preheat the oven to 180°C (350°F).
- Lightly grease a muffin tin with oil.
- Fill each cup with vegetables and cheese (and any extras you like).
- Whisk the eggs with milk, salt, pepper, and herbs.
- Pour the egg mixture into each cup until filled.
- Bake for 18–22 minutes until set and lightly golden on top.
- Let cool slightly, then remove from the pan.
Tips
- Make them the night before and reheat in the morning.
- Delicious warm or cold.
- Great for a healthy, protein-rich meal.
