Southern Sausage Biscuits
Ingredients (Makes about 8 biscuits):
For the Biscuits:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon sugar (optional)
- 1/2 cup cold butter (cut into cubes)
- 3/4 cup buttermilk (cold)
For the Sausage Filling:
- 1 lb breakfast sausage (pork or turkey)
Instructions:
1. Make the Biscuits:
- Preheat your oven to 220°C (425°F).
- In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
- Add the cold butter and use your fingers or a pastry cutter to mix until it looks like coarse crumbs.
- Pour in the cold buttermilk and gently mix until just combined (don’t overwork the dough).
- Turn the dough onto a floured surface, fold it a few times, then roll it out to about 1-inch thickness.
- Cut into rounds using a biscuit cutter or glass.
- Place on a baking sheet and bake for 12–15 minutes until golden brown.
2. Cook the Sausage:
- Heat a skillet over medium heat.
- Cook the sausage, breaking it into small pieces, until fully browned and cooked through (about 8–10 minutes).
- Drain excess grease if needed.
3. Assemble:
- Slice the warm biscuits in half.
- Add a generous scoop of sausage inside.
- Close and serve warm.
Optional Add-ons:
- Add a slice of cheddar cheese
- Drizzle with honey or maple syrup for a sweet-savory twist
- Top with a fried egg for a full breakfast sandwich
