Southern Sausage Biscuits

 Ingredients (Makes about 8 biscuits):

For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon sugar (optional)
  • 1/2 cup cold butter (cut into cubes)
  • 3/4 cup buttermilk (cold)

For the Sausage Filling:

  • 1 lb breakfast sausage (pork or turkey)

 Instructions:

1. Make the Biscuits:

  1. Preheat your oven to 220°C (425°F).
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
  3. Add the cold butter and use your fingers or a pastry cutter to mix until it looks like coarse crumbs.
  4. Pour in the cold buttermilk and gently mix until just combined (don’t overwork the dough).
  5. Turn the dough onto a floured surface, fold it a few times, then roll it out to about 1-inch thickness.
  6. Cut into rounds using a biscuit cutter or glass.
  7. Place on a baking sheet and bake for 12–15 minutes until golden brown.

2. Cook the Sausage:

  1. Heat a skillet over medium heat.
  2. Cook the sausage, breaking it into small pieces, until fully browned and cooked through (about 8–10 minutes).
  3. Drain excess grease if needed.

3. Assemble:

  1. Slice the warm biscuits in half.
  2. Add a generous scoop of sausage inside.
  3. Close and serve warm.

 Optional Add-ons:

  • Add a slice of cheddar cheese
  • Drizzle with honey or maple syrup for a sweet-savory twist
  • Top with a fried egg for a full breakfast sandwich

 Tip: For extra fluffy biscuits, keep your butter and buttermilk very cold—this is the secret to that classic Southern texture!
