Cucumber Cabbage Salad (Light & Weight-Friendly)
Ingredients:
- 2 cups shredded cabbage (green or Napa)
- 1/2 cucumber, thinly sliced
- 1/2 red bell pepper, thinly sliced
- 2 green onions, chopped
- 1/4 tsp black pepper
Optional Dressing :
- 1 tbsp olive oil
- 1 tbsp lemon juice or vinegar
- Pinch of salt
Instructions:
- Add cabbage, cucumber, bell pepper, and green onions to a bowl.
- Sprinkle with black pepper.
- Mix the dressing ingredients in a small bowl, then pour over the salad.
- Toss everything well and serve fresh.
