Cucumber Cabbage Salad

 Cucumber Cabbage Salad (Light & Weight-Friendly)

Ingredients:

  • 2 cups shredded cabbage (green or Napa)
  • 1/2 cucumber, thinly sliced
  • 1/2 red bell pepper, thinly sliced
  • 2 green onions, chopped
  • 1/4 tsp black pepper

Optional Dressing :

  • 1 tbsp olive oil
  • 1 tbsp lemon juice or vinegar
  • Pinch of salt

Instructions:

  1. Add cabbage, cucumber, bell pepper, and green onions to a bowl.
  2. Sprinkle with black pepper.
  3. Mix the dressing ingredients in a small bowl, then pour over the salad.
  4. Toss everything well and serve fresh.
