A rich, cozy, and budget-friendly casserole layered with seasoned beef, tender potatoes, creamy sauce, and topped with gooey melted cheese and crispy onions. Perfect for family dinners!

 Ingredients

 The Beef Layer:

  • 1 lb (450g) ground beef (80/20)
  • ½ yellow onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika (optional)

 The Potato Layer:

  • 4–5 medium potatoes, peeled and thinly sliced
  • 1 packet French onion soup mix
  • 2 tablespoons olive oil or melted butter

 The Creamy Sauce:

  • 1 can (10.5 oz / ~300g) cream of mushroom soup
  • ½ cup milk
  • ½ cup sour cream (optional but recommended)
  • ½ teaspoon garlic powder

 The Topping:

  • 2 cups shredded Colby Jack cheese (or cheddar)
  • 1–1½ cups crispy fried onions

 Instructions

 Preheat the oven

  • Set your oven to 375°F (190°C).
  • Lightly grease a baking dish (9×13 inch).

 Cook the beef

  • In a skillet over medium heat:
    • Cook the ground beef with diced onion until browned.
    • Add garlic, salt, pepper, and paprika.
    • Stir well and cook for 1–2 minutes more.
  • Drain excess fat if needed.

 Prepare the potatoes

  • In a large bowl:
    • Toss the sliced potatoes with French onion soup mix and olive oil.
  • Make sure all slices are well coated.

 Make the creamy sauce

  • In another bowl:
    • Mix cream of mushroom soup, milk, sour cream, and garlic powder until smooth.

Assemble the casserole

  • In your baking dish:
    1. Add a layer of potatoes
    2. Spread half of the beef mixture
    3. Pour some of the creamy sauce
    4. Repeat layers (potatoes → beef → sauce)
  • Finish with remaining sauce on top.

 Bake (covered)

  • Cover with foil and bake for 45–50 minutes, until potatoes are tender.

 Add cheese & onions

  • Remove foil:
    • Sprinkle shredded cheese evenly
    • Top with crispy fried onions

 Final bake (uncovered)

  • Bake for another 10–15 minutes, until:
    • Cheese is melted and bubbly
    • Top is golden and crispy

Serving Tips

  • Let it rest for 5–10 minutes before serving.
  • Serve with:
    • Fresh salad
    • Steamed vegetables
