Mississippi Mud Potatoes

 Ingredients

  • 6–8 russet potatoes, peeled and diced
  • 2 cups shredded cheddar cheese
  • 1 cup mayonnaise (full-fat for best flavor)
  • 8 slices bacon, cooked crispy and crumbled
  • 1 small onion, finely chopped (optional but recommended)
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • 1/2 tsp paprika (optional)
  • Chopped green onions or parsley (for garnish)

 Instructions

  1. Preheat oven
    Set your oven to 375°F (190°C).
  2. Prepare potatoes
    Peel and dice the potatoes into small cubes. You can rinse and pat them dry to remove excess starch.
  3. Mix ingredients
    In a large bowl, combine:

    • Diced potatoes
    • Shredded cheese
    • Mayonnaise
    • Crumbled bacon
    • Onion & garlic
    • Salt, pepper, and paprika

    Mix everything well until evenly coated.

  4. Transfer to baking dish
    Grease a baking dish and spread the mixture evenly.
  5. Bake
    Cover with foil and bake for 45 minutes.
    Then remove foil and bake another 15–20 minutes until:

    • Potatoes are tender
    • Top is golden and slightly crispy
  6. Garnish & serve
    Sprinkle with green onions or parsley and serve hot.

 Tips

  • Add a little sour cream for extra creaminess
  • Use mozzarella + cheddar mix for extra cheesy texture
  • For crispier edges, bake uncovered a bit longer
