Pineapple Chicken and Rice

 Pineapple Chicken and Rice  Sweet, Savory & Comforting in Every Bite!

Ingredients

  • 1 lb chicken breast, diced
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup uncooked long-grain rice
  • 1 can (20 oz) pineapple chunks, drained (reserve ½ cup juice)
  • 2 cups chicken broth
  • ¼ cup soy sauce
  • 2 tbsp brown sugar
  • 1 tsp ground ginger
  • Salt and black pepper, to taste
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat the olive oil in a large skillet or deep pan over medium heat. Add the diced chicken and season lightly with salt and pepper. Cook for 5–6 minutes until lightly browned.
  2. Add the onion, garlic, and red bell pepper. Cook for 2–3 minutes until softened and fragrant.
  3. Stir in the uncooked rice and cook for 1 minute.
  4. Add the chicken broth, reserved pineapple juice, soy sauce, brown sugar, and ginger. Stir well.
  5. Bring to a gentle boil, then reduce the heat to low. Cover and simmer for 18–20 minutes, or until the rice is tender and the liquid is absorbed.
  6. Stir in the pineapple chunks and cook for another 2–3 minutes until heated through.
  7. Sprinkle with sliced green onions before serving.

For extra flavor, add a pinch of red pepper flakes or a drizzle of teriyaki sauce.
