 Cheesy Spinach-Artichoke Bagels

 Ingredients:

  • 8 oz cream cheese, softened
  • 1/2 cup finely chopped artichoke hearts (drained if canned)
  • 1/2 cup finely chopped spinach (fresh or thawed & drained if frozen)
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup freshly grated Parmesan cheese
  • 1 garlic clove, minced
  • 1 tablespoon chopped fresh parsley (plus more for garnish)
  • 1/2 teaspoon crushed red pepper flakes (optional, plus more for garnish)
  • Salt (to taste)
  • Black pepper (to taste)
  • 2 bagels, halved

Instructions:

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Prepare the filling:
    In a mixing bowl, combine the cream cheese, chopped artichokes, spinach, half of the mozzarella cheese, Parmesan, garlic, parsley, and red pepper flakes.
    Season with salt and black pepper. Mix well until everything is evenly combined.
  3. Assemble the bagels:
    Place the bagel halves cut-side up on the prepared baking sheet.
    Spread the spinach-artichoke mixture evenly over each half.
  4. Add extra cheese:
    Sprinkle the remaining mozzarella cheese on top of each bagel.
  5. Bake for 12–15 minutes, or until the cheese is melted, bubbly, and slightly golden.
  6. Garnish & serve:
    Remove from the oven, sprinkle with extra parsley and red pepper flakes if desired.
    Serve warm and enjoy!

Tip:
You can add cooked chicken or crispy bacon on top for extra flavor!
