Slow Cooker Cajun Butter Potato Packets
Ingredients
- 1.5–3 lbs potatoes (baby potatoes or Yukon gold), cut into chunks
- 1 lb smoked sausage, sliced
- 1 lb green beans, trimmed (fresh or frozen)
- 1 small onion, diced
- ½ cup (1 stick) butter
- 2 tbsp Cajun seasoning
- 1 packet onion soup mix (optional but adds flavor)
- 1–2 tbsp olive oil
- ½ tsp garlic powder
- Salt & black pepper to taste
Instructions
- Prep everything
- Wash and cut potatoes into bite-size pieces
- Slice sausage and chop onion
- Layer in slow cooker
- Add potatoes, onion, green beans, and sausage
- Season
- Drizzle olive oil
- Sprinkle Cajun seasoning, garlic powder, salt, pepper, and onion soup mix
- Toss everything to coat well
- Add butter
- Place the stick of butter on top
- Cook
- LOW: 6–7 hours
- HIGH: 4–5 hours
- Cook until potatoes are tender
- Serve
- Stir everything together before serving
- Serve hot as a main dish or side
Tips
- Add shrimp at the end for a seafood twist
- Use foil packets inside the slow cooker for a “packet-style” version
- Adjust Cajun seasoning depending on how spicy you like it
