Sticky Honey Garlic Chicken Skewers with Lemon Whipped Feta Dip
Ingredients
For the Chicken
- 1 lb (450 g) chicken breast, cut into cubes
- 2 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
For the Honey Garlic Glaze
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tbsp lemon juice
For the Lemon Whipped Feta Dip
- 1 cup (200 g) feta cheese
- ½ cup plain Greek yogurt
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 small garlic clove, minced
- 1–2 tbsp water (to loosen, as needed)
Instructions
1 Prepare the Chicken
In a bowl, toss the chicken cubes with olive oil, salt, and black pepper until evenly coated.
2 Make the Honey Garlic Glaze
In a small bowl, whisk together the honey, minced garlic, soy sauce, and lemon juice.
3 Skewer the Chicken
Thread the seasoned chicken pieces onto skewers. If using wooden skewers, soak them in water for 20 minutes first to prevent burning.
4 Cook the Skewers
Heat a grill pan or outdoor grill over medium-high heat. Cook the skewers for 10–12 minutes, turning occasionally, until the chicken is cooked through and lightly charred.
5 Glaze
Brush the honey garlic glaze over the skewers during the last 3–4 minutes of cooking, turning to coat all sides. Let the glaze caramelize and become sticky.
6 Make the Lemon Whipped Feta Dip
In a blender or food processor, combine feta, Greek yogurt, olive oil, lemon juice, lemon zest, and garlic. Blend until smooth and creamy. Add 1–2 tablespoons of water to reach a soft, whipped consistency.
7 Serve
Serve the hot sticky chicken skewers with the lemon whipped feta dip on the side. Garnish with extra lemon zest or chopped parsley if desired.
Enjoy!
