Easy Frito Pie Recipe – The Ultimate Comfort Food

Ingredients:
• 1 lb ground beef
• 1 small onion, finely chopped
• 1 packet taco seasoning
• 1 (10 oz) can diced tomatoes with green chilies
• 1 (15 oz) can ranch-style beans (undrained)
• 1 cup corn kernels (fresh, canned, or frozen)
• 1 (10.25 oz) bag Fritos corn chips
• 1 ½ cups shredded cheddar cheese

Instructions:

  1. Cook the beef
    In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add onion & seasoning
    Stir in the chopped onion and cook for 2–3 minutes until softened. Add taco seasoning and mix well.
  3. Add the rest
    Pour in diced tomatoes with green chilies, ranch-style beans, and corn. Stir everything together and let it simmer for 5–7 minutes until heated through and slightly thickened.
  4. Assemble the Frito Pie
    • Option 1 (Classic layered):
      In a baking dish, add a layer of Fritos, then beef mixture, then cheese. Repeat layers if desired.
    • Option 2 (Quick serve):
      Serve the beef mixture over a bed of Fritos and top with cheese.
  5. Melt the cheese
    If using a baking dish, place in a preheated oven at 350°F (175°C) for 10–15 minutes until cheese is melted and bubbly.
  6. Serve & enjoy
    Top with your favorite extras like sour cream, jalapeños, green onions, or avocado.
