Cucumber Ranch Crack Salad

Ingredients

  • 3 cups diced cucumbers (about 2 large cucumbers)
  • 1 cup shredded cheddar cheese
  • ½ cup cooked and crumbled bacon
  • ½ cup sour cream
  • ½ cup ranch dressing
  • ¼ cup chopped green onions (optional, for garnish)
  • Salt and pepper, to taste

Instructions

  1. Prepare the cucumbers: Wash, peel (if desired), and dice the cucumbers into bite-sized pieces. Place them in a large mixing bowl.
  2. Cook the bacon: Cook bacon until crispy, then crumble it into small pieces. Add to the bowl with cucumbers.
  3. Add cheese and dressing: Add shredded cheddar cheese, sour cream, and ranch dressing to the bowl. Mix everything gently until the cucumbers are evenly coated.
  4. Season: Taste and add salt and pepper as needed. Be careful with the salt if your bacon is already salty.
  5. Optional garnish: Sprinkle chopped green onions on top for added flavor and color.
  6. Chill and serve: Cover and refrigerate for at least 30 minutes to let the flavors meld. Serve cold as a refreshing side dish or snack.
