Slow Cooker Pork Chops with Stuffing Crust
Transform a few simple ingredients into a comforting, savory slow cooker meal with tender pork chops and a flavorful stuffing topping. Perfect for busy weeknights, this dump-and-cook recipe is easy, satisfying, and full of classic home-cooked flavor.
Ingredients
- 4 boneless pork chops (about 1 inch thick)
- 1 (6 oz) box of seasoned dry stuffing mix
- 1 (10.5 oz) can of condensed cream of mushroom soup
- ½ cup chicken broth (or more if needed)
- 1 teaspoon garlic powder (optional)
- ½ teaspoon black pepper (optional)
- 1 teaspoon dried thyme or rosemary (optional, for extra flavor)
Instructions
Step 1: Prepare the Slow Cooker
- Lightly grease the inside of your slow cooker with butter or non-stick spray. This prevents the stuffing from sticking and makes cleanup easier.
Step 2: Season the Pork Chops
- Pat the pork chops dry with a paper towel.
- Sprinkle both sides with garlic powder, black pepper, and dried herbs if using.
- Place the pork chops evenly in the bottom of the slow cooker.
Step 3: Make the Creamy Sauce
- In a small bowl, mix together the condensed cream of mushroom soup and chicken broth until smooth.
- Pour the mixture over the pork chops, making sure they are evenly coated.
Step 4: Add the Stuffing Crust
- Sprinkle the dry stuffing mix evenly over the top of the pork chops and creamy sauce.
- Press the stuffing lightly so that it makes contact with the liquid below. Do not stir. This allows the stuffing to soak up the juices while forming a soft, flavorful crust.
Step 5: Slow Cook
- Cover the slow cooker with the lid.
- Cook on LOW for 5–6 hours or HIGH for 2½–3 hours, until the pork chops are tender and fully cooked (internal temperature of 145°F / 63°C).
- The stuffing will absorb the sauce and create a deliciously moist topping.
Step 6: Serve
- Use a spatula to carefully lift the pork chops and stuffing onto plates.
- Serve with your favorite sides such as mashed potatoes, steamed vegetables, or a crisp green salad.
- Optional: Drizzle extra sauce from the slow cooker over the pork chops for added flavor.
Tips & Variations
- Soup swap: You can use cream of chicken or cream of celery soup for a different flavor profile.
- Make it extra hearty: Add sliced mushrooms, onions, or diced carrots to the bottom of the slow cooker before adding the pork chops.
- Leftovers: Store cooked pork chops and stuffing in an airtight container in the fridge for up to 3 days. Reheat gently in the microwave or oven.
- Crispier topping: After cooking, you can transfer the pork chops and stuffing to a baking dish and broil for 2–3 minutes for a slightly crispier top.
This recipe is a classic dump-and-go slow cooker meal that combines convenience and comfort. With tender pork, creamy sauce, and a savory stuffing crust, it’s sure to become a family favorite.
