 Teriyaki Chicken

 Ingredients:

  • 500 g chicken thighs or chicken breast (cut into bite-sized pieces)
  • 2 tablespoons soy sauce
  • 2 tablespoons sugar (or honey)
  • 2 tablespoons mirin (or substitute with vinegar + a little sugar)
  • 1 tablespoon sake (optional)
  • 1 teaspoon grated ginger
  • 1 teaspoon garlic (minced)
  • 1 tablespoon oil
  • 1 teaspoon cornstarch + 2 tablespoons water (optional, for thick sauce)

 Instructions:

  1. Prepare the sauce
    In a bowl, mix soy sauce, sugar, mirin, sake (if using), ginger, and garlic.
  2. Cook the chicken
    Heat oil in a pan over medium heat. Add the chicken and cook until golden and fully cooked (about 6–8 minutes).
  3. Add the sauce
    Pour the sauce into the pan with the chicken. Let it simmer for 3–5 minutes.
  4. Thicken (optional)
    Add the cornstarch mixture and stir until the sauce becomes glossy and thick.
  5. Serve
    Serve hot over rice 🍚 and garnish with sesame seeds or chopped green onions.

 Tips:

  • Chicken thighs are juicier, but breast works if you want something lighter
  • Add vegetables like broccoli or bell peppers for a complete meal
  • For extra flavor, marinate the chicken for 30 minutes before cooking
