Pot-Cooked Roast with Mushrooms
Ingredients:
- 1 kg beef roast (whole piece)
- 300 g mushrooms (sliced)
- 1 onion (chopped)
- 3 garlic cloves
- 2 tablespoons olive oil
- 1 cup beef broth
- 1/2 cup water or white wine (optional)
- Salt and black pepper to taste
- 1 teaspoon thyme or rosemary
Instructions:
- Heat the olive oil in a pot and sear the beef on all sides until browned.
- Remove the meat, then sauté the onion and garlic until softened.
- Add the mushrooms and cook until they release their moisture and lightly brown.
- Return the beef to the pot and add the broth and water (or wine).
- Season with salt, pepper, and herbs.
- Cover and cook on low heat for 1.5 to 2 hours, until the meat becomes tender.
- Slice the roast and serve with the mushroom sauce.
Serving:
Serve hot with mashed potatoes, rice, or vegetables.
