Pot-Cooked Roast with Mushrooms

 Ingredients:

  • 1 kg beef roast (whole piece)
  • 300 g mushrooms (sliced)
  • 1 onion (chopped)
  • 3 garlic cloves
  • 2 tablespoons olive oil
  • 1 cup beef broth
  • 1/2 cup water or white wine (optional)
  • Salt and black pepper to taste
  • 1 teaspoon thyme or rosemary

 Instructions:

  1. Heat the olive oil in a pot and sear the beef on all sides until browned.
  2. Remove the meat, then sauté the onion and garlic until softened.
  3. Add the mushrooms and cook until they release their moisture and lightly brown.
  4. Return the beef to the pot and add the broth and water (or wine).
  5. Season with salt, pepper, and herbs.
  6. Cover and cook on low heat for 1.5 to 2 hours, until the meat becomes tender.
  7. Slice the roast and serve with the mushroom sauce.

 Serving:

Serve hot with mashed potatoes, rice, or vegetables.
