 HAWAIIAN STYLE TERIYAKI CHICKEN

 Ingredients:

  • 3 pounds chicken thighs (boneless or bone-in)
  • 1 cup soy sauce
  • 1 cup pineapple juice (or pineapple chunks with juice)
  • 1 cup packed brown sugar
  • 5 cloves garlic, mashed
  • 1 tablespoon fresh ginger, minced

Instructions:

  1. Make the marinade:
    In a large bowl, mix soy sauce, pineapple juice, brown sugar, garlic, and ginger until the sugar dissolves.
  2. Marinate the chicken:
    Add the chicken thighs to the mixture. Cover and refrigerate for at least 2 hours (overnight is best for more flavor).
  3. Cook the chicken:
    • Grill method: Grill over medium heat for about 6–7 minutes per side until fully cooked and nicely caramelized.
    • Pan method: Cook in a large skillet over medium heat, turning occasionally, until the chicken is cooked through and sauce thickens.
    • Oven method: Bake at 375°F (190°C) for 35–45 minutes, basting with sauce halfway through.
  4. Thicken the sauce (optional):
    Remove the chicken and simmer the leftover marinade in a pan until it thickens into a glaze. (Make sure to boil it well before using!)
  5. Serve:
    Serve hot with rice, grilled pineapple, or steamed veggies.

 Tips:

  • Sprinkle with sesame seeds or green onions for extra flavor
  • Add a little chili flakes if you like it spicy
  • Best served with white rice to soak up that sweet-savory sauce
