Slow Cooker Cheesy Chicken Gratin

Ingredients

  • 3 cups cooked chicken breast, shredded
  • 2 cups shredded cheddar cheese
  • 1 cup mozzarella cheese
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sour cream
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 3 medium potatoes, thinly sliced
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme

Instructions

  1. Lightly grease the slow cooker with butter.
  2. Place a layer of sliced potatoes at the bottom. Add a portion of shredded chicken on top.
  3. Sprinkle some onion, garlic, salt, pepper, paprika, and thyme over the layer.
  4. Add a mix of cheddar and mozzarella cheese.
  5. Repeat the layers (potatoes, chicken, seasoning, cheese) until all ingredients are used.
  6. In a bowl, mix heavy cream, chicken broth, and sour cream. Pour this mixture evenly over everything.
  7. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the potatoes are tender.
  8. In the last 20 minutes, add extra cheese on top and let it melt.
  9. Let it rest for a few minutes before serving.

Tips

  • You can add broccoli or spinach for extra flavor.
  • Use rotisserie chicken to save time.
  • For a crispy top, transfer to an oven dish and broil for a few minutes.
