Garlic Chicken with Broccoli and Spinach

Ingredients:

  • 2 cups chicken breast, cubed
  • 1 cup broccoli florets
  • 1 cup fresh spinach leaves
  • 1/4 cup olive oil
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • 1/2 teaspoon Italian seasoning (optional)

Instructions:

  1. Prepare the chicken
    Season the cubed chicken with salt, black pepper, and paprika.
  2. Cook the chicken
    Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 5–7 minutes until golden and fully cooked. Remove and set aside.
  3. Sauté the garlic
    In the same pan, add minced garlic and cook for about 30 seconds until fragrant (be careful not to burn it).
  4. Cook the vegetables
    Add broccoli florets and cook for 3–4 minutes. Pour in the chicken broth and let it simmer until the broccoli becomes tender.
  5. Add spinach
    Stir in the spinach and cook until wilted, about 1–2 minutes.
  6. Combine everything
    Return the cooked chicken to the pan. Mix well and let everything cook together for another 2–3 minutes.
  7. Finish with cheese
    Sprinkle grated Parmesan cheese on top and stir until melted and creamy.

Serving Suggestion:

Serve hot on its own, or over rice, pasta, or mashed potatoes for a complete meal.
