Smashed Onion Burgers with Secret Sauce

Ingredients

For the Burgers

  • 1 lb (450 g) ground beef (80/20 for best flavor)
  • 1 large onion, very thinly sliced
  • Salt and black pepper, to taste
  • 4 burger buns
  • 4 slices American cheese or cheddar (optional)
  • 1 tablespoon oil or butter (for cooking)

For the Secret Sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon pickle relish (or finely chopped pickles)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste

Instructions

1. Make the Secret Sauce

In a small bowl, mix mayonnaise, ketchup, mustard, pickle relish, garlic powder, onion powder, salt, and pepper.
Cover and refrigerate while preparing the burgers.

2. Prepare the Beef

Divide the ground beef into 4 equal balls (do not flatten yet).
Season lightly with salt and pepper.

3. Cook the Onions

Heat a large skillet or griddle over medium-high heat and add oil or butter.
Place a generous handful of sliced onions on the hot surface for each burger.

4. Smash the Burgers

Place one beef ball directly on top of the onions.
Using a spatula or burger press, smash the beef firmly into the onions.
Season the top with salt and pepper.

5. Cook

Let cook for 2–3 minutes until the bottom is crispy and caramelized.
Flip the burger, add cheese if using, and cook another 1–2 minutes until done.

6. Toast the Buns

Lightly toast the burger buns in the same skillet until golden.

7. Assemble

Spread secret sauce on both sides of the buns.
Add the smashed onion burger, close with the top bun, and serve immediately.

Serving Tips

  • Serve with fries, chips, or a simple salad
  • Add lettuce or pickles if you like extra crunch
  • For extra flavor, add a dash of hot sauce to the secret sauce
