Crockpot Garlic Butter Beef Bites & Potatoes
Description:
Tender beef bites and baby potatoes slow-cooked in a rich garlic butter sauce. An easy, comforting meal that practically cooks itself!
Ingredients:
- 2 lbs (900 g) beef stew meat, cut into bite-size cubes
- 1½ lbs (700 g) baby potatoes, halved if large
- 4 tablespoons unsalted butter, melted
- 5 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- ½ teaspoon paprika
- Salt and black pepper, to taste
- ½ cup beef broth
- 1 tablespoon olive oil
Optional Garnish:
- Fresh parsley, chopped
Instructions:
- Prepare the Crockpot
Lightly grease the inside of your crockpot with olive oil or cooking spray. - Add Beef & Potatoes
Place the cubed beef and baby potatoes into the crockpot. - Make the Garlic Butter Sauce
In a small bowl, mix melted butter, minced garlic, beef broth, onion powder, garlic powder, thyme, parsley, paprika, salt, and pepper. - Combine
Pour the garlic butter mixture evenly over the beef and potatoes. Gently stir to coat everything well. - Cook
- Cover and cook on LOW for 6–8 hours, or
- Cook on HIGH for 3–4 hours,
until the beef is tender and the potatoes are fork-tender.
- Finish & Serve
Taste and adjust seasoning if needed.
Garnish with fresh parsley before serving.
Tips:
- For extra flavor, sear the beef cubes in a hot skillet for 2–3 minutes before adding them to the crockpot.
- Add carrots or green beans in the last 2 hours for a complete one-pot meal.
- Serve with crusty bread or a fresh green salad.
