Ingredients:

  • 1 can (15 oz / 425 g) whole kernel corn, drained
  • 1 can (15 oz / 425 g) cream-style corn
  • 1 cup shredded cheddar cheese
  • ½ cup unsalted butter, melted
  • ½ cup sugar
  • 2 large eggs, beaten
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup milk (optional, for extra creaminess)

Instructions:

1. Preheat the Oven

  • Preheat your oven to 350°F (175°C).
  • Grease a 9×9-inch (23×23 cm) baking dish or similar casserole dish.

2. Mix the Ingredients

  1. In a large bowl, combine the whole kernel corn and cream-style corn.
  2. Add melted butter, sugar, eggs, shredded cheddar cheese, flour, baking powder, salt, and pepper.
  3. Stir until everything is evenly mixed. If you want a creamier texture, add milk gradually.

3. Bake

  • Pour the mixture into the prepared baking dish.
  • Bake for 45–55 minutes, or until the top is golden brown and the pudding is set in the center.

4. Serve

  • Let cool for 5–10 minutes before serving.
  • Delicious warm as a side dish for holidays, dinners, or casual meals.

Tips:

  • For extra cheesy flavor, sprinkle a little more cheddar on top before baking.
  • You can add diced jalapeños or bell peppers for a spicy or colorful twist.
  • Corn pudding can also be made ahead and baked right before serving.
