 Amish Snow Day Soup

A cozy, creamy comfort soup straight from Amish kitchens—perfect for cold days, simple ingredients, big warmth

 Ingredients

  • 4 slices bacon, chopped
  • 1 tablespoon butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups potatoes, peeled and diced
  • 2 cups carrots, sliced
  • 1 cup celery, sliced
  • 3 cups chicken broth (or vegetable broth)
  • 1½ cups milk (whole milk is best)
  • 1 cup heavy cream
  • 1½ cups shredded cheddar cheese
  • 2 tablespoons all-purpose flour
  • Salt and black pepper, to taste
  • ½ teaspoon dried thyme (optional)
  • Fresh parsley or chives, for garnish (optional)

 Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pot.
  2. Add butter to the pot, then sauté the onion until soft and translucent (about 3–4 minutes). Add garlic and cook for 30 seconds.
  3. Stir in potatoes, carrots, and celery. Pour in the chicken broth and bring to a gentle boil.
  4. Reduce heat, cover, and simmer for 15–20 minutes, or until vegetables are tender.
  5. In a small bowl, whisk flour with a little milk to make a smooth slurry. Stir it into the soup.
  6. Add remaining milk and heavy cream. Simmer gently until the soup thickens.
  7. Stir in shredded cheddar cheese until melted and creamy.
  8. Season with salt, pepper, and thyme. Add the cooked bacon back in.
  9. Serve hot, garnished with parsley or chives if you like.

 Tips

  • For extra thickness, mash a few potatoes directly in the pot.
  • You can add corn or shredded chicken for a heartier version.
  • Serve with crusty bread or homemade rolls—Amish style
