Cherry Dessert Enchiladas
Ingredients
- 8 small flour tortillas
- 1 can (21 oz) cherry pie filling
- 4 oz cream cheese, softened
- 1/4 cup granulated sugar
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C). Lightly grease a baking dish.
- Prepare the cream cheese: In a small bowl, mix the softened cream cheese with the granulated sugar until smooth and creamy.
- Fill the tortillas: Spread a thin layer of the cream cheese mixture over each tortilla. Add a spoonful of cherry pie filling down the center.
- Roll them up: Fold in the sides of each tortilla and roll it up like an enchilada. Place the rolled tortillas seam-side down in the prepared baking dish.
- Add the topping: Spoon any remaining cherry pie filling over the tortillas.
- Bake: Bake for 20–25 minutes, or until the tortillas are lightly golden and the filling is hot.
- Serve: Let the dessert cool for a few minutes before serving. Enjoy warm, with whipped cream or a scoop of vanilla ice cream if desired.
Tips
- Avoid overfilling the tortillas to prevent the filling from spilling out.
- Make sure the cream cheese is softened for easy spreading.
- For extra sweetness, sprinkle a little cinnamon sugar over the tortillas before baking.
- Serve warm for the best flavor and texture.
