Slow Cooker Creamy Corn and Smoked Sausage

Slow Cooker Creamy Corn and Smoked Sausage

Ingredients

  • 1 lb smoked sausage, sliced into rounds
  • 4 cups frozen corn kernels
  • 8 oz cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • ½ cup heavy cream
  • ½ cup chicken broth
  • 3 tablespoons butter, melted
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Prepare the Ingredients: Slice the smoked sausage into rounds and cut the cream cheese into small cubes.
  2. Add the Corn and Sausage: Place the frozen corn and sliced smoked sausage into the slow cooker. Spread them evenly across the bottom.
  3. Make the Creamy Mixture: In a bowl, whisk together the heavy cream, chicken broth, melted butter, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  4. Combine: Pour the cream mixture over the corn and sausage. Add the cream cheese cubes and stir gently.
  5. Slow Cook: Cover and cook on LOW for 3–4 hours or HIGH for 1½–2 hours, until the corn is tender and the cream cheese has melted. Stir occasionally if possible.
  6. Add the Cheddar Cheese: During the last 15–20 minutes of cooking, stir in the shredded cheddar cheese. Cover and cook until melted and creamy.
  7. Stir and Adjust: Mix everything well until the sauce is smooth. If the mixture is too thick, add a little extra chicken broth.
  8. Garnish and Serve: Sprinkle with chopped fresh parsley and serve warm.

Tips

  • Use kielbasa or smoked sausage for the best smoky flavor.
  • Add diced bell peppers or jalapeños for extra flavor.
  • For a richer sauce, add a little extra cheddar cheese.
  • Serve over rice or alongside cornbread for a satisfying meal.

Storage

Refrigerate leftovers in an airtight container for up to 3–4 days. Reheat gently in the microwave or on the stovetop, adding a splash of broth or milk if needed.

Enjoy this creamy, cheesy, smoky comfort-food favorite!
