Irish Colcannon
A classic Irish comfort food made with creamy mashed potatoes, tender cabbage, butter, and green onions. Simple, hearty, and incredibly comforting!
Ingredients
- 2 lbs potatoes, peeled and cut into chunks
- 4 cups chopped green cabbage
- 4 tbsp butter, plus more for serving
- ½ cup whole milk or heavy cream
- 3–4 green onions, thinly sliced
- 1 tsp salt, or to taste
- ½ tsp black pepper
Instructions
- Place the potatoes in a large pot, cover with salted water, and bring to a boil. Cook for 15–20 minutes, or until fork-tender.
- Meanwhile, melt 1 tablespoon of butter in a large skillet over medium heat. Add the cabbage and cook for 5–7 minutes, until tender.
- Drain the potatoes well and return them to the pot. Mash until smooth.
- Warm the milk or cream with the remaining butter, then gradually add it to the mashed potatoes.
- Fold in the cooked cabbage and sliced green onions. Season with salt and black pepper.
- Serve hot with an extra pat of butter melting in the center.
Tip: For extra flavor, add a little chopped fresh parsley or crispy bacon before serving.
