No-Bake Peanut Butter Cheesecake Balls

These No-Bake Peanut Butter Cheesecake Balls are creamy, rich, and incredibly easy to make. With a buttery graham cracker base, smooth peanut butter, and a sweet cheesecake filling, they make the perfect bite-sized dessert for holidays, parties, or whenever you’re craving something sweet.

Ingredients

  • 1 ½ cups (about 150 g) graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 8 oz (225 g) cream cheese, softened
  • ½ cup creamy peanut butter
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips, for coating
  • 1 teaspoon vegetable or coconut oil, optional

Instructions

  1. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly moistened.
  2. In a separate bowl, beat the softened cream cheese until smooth and creamy.
  3. Add the peanut butter, powdered sugar, and vanilla extract. Beat until fully combined and smooth.
  4. Add the graham cracker mixture to the peanut butter cheesecake mixture. Stir until a soft, thick dough forms.
  5. Cover the bowl and refrigerate for about 30–60 minutes, or until the mixture is firm enough to handle.
  6. Scoop out small portions and roll them between your hands to form bite-sized balls.
  7. Place the cheesecake balls on a parchment-lined baking sheet and refrigerate for another 15–20 minutes.
  8. Melt the chocolate chips in the microwave in 20–30 second intervals, stirring between each interval until smooth. Stir in the optional oil for a thinner coating.
  9. Dip each cheesecake ball into the melted chocolate, coating it completely or drizzling the chocolate over the top.
  10. Return the coated balls to the refrigerator and chill for at least 30 minutes, or until the chocolate is completely set.
  11. Store in an airtight container in the refrigerator until ready to serve.

Tips

  • Use full-fat cream cheese for the creamiest texture.
  • Natural peanut butter can make the mixture softer, so regular creamy peanut butter works best.
  • Add chopped peanuts, chocolate sprinkles, or a drizzle of melted peanut butter for decoration.
  • Keep the cheesecake balls refrigerated because they contain cream cheese.

Makes about 20–24 cheesecake balls, depending on size.
