Curried Sausages with Creamy Mashed Potatoes
These hearty Curried Sausages are pure comfort food! Golden-browned sausages are simmered in a rich, savory curry and onion gravy, then served over creamy mashed potatoes. It’s an easy, satisfying family dinner that’s packed with flavor.
Ingredients
For the Curried Sausages
- 8 pork or beef sausages
- 1 tablespoon olive oil
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 tablespoons mild curry powder
- 2 cups beef or chicken broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon tomato paste
- 1 tablespoon brown sugar
- 1 tablespoon soy sauce
- 1 cup frozen peas
- Salt and black pepper, to taste
- 1 tablespoon chopped fresh parsley, for garnish
For the Mashed Potatoes
- 2 pounds potatoes, peeled and cut into chunks
- 4 tablespoons butter
- 1/2 cup warm milk
- Salt, to taste
- Black pepper, to taste
Instructions
Prepare the Mashed Potatoes
- Place the potatoes in a large pot and cover with cold salted water.
- Bring to a boil and cook for 15–20 minutes, or until the potatoes are fork-tender.
- Drain well and return the potatoes to the warm pot.
- Add the butter and warm milk, then mash until smooth and creamy.
- Season with salt and black pepper. Keep warm while preparing the sausages.
Make the Curried Sausages
- Heat the olive oil in a large skillet over medium-high heat.
- Add the sausages and cook for 6–8 minutes, turning occasionally, until browned on all sides. Remove from the skillet and set aside.
- Add the sliced onion to the same skillet and cook for 4–5 minutes until softened and lightly golden.
- Add the garlic and cook for 30 seconds.
- Sprinkle the flour and curry powder over the onions. Stir well and cook for about 1 minute.
- Gradually pour in the broth, stirring constantly to prevent lumps.
- Stir in the Worcestershire sauce, tomato paste, brown sugar, and soy sauce.
- Return the sausages to the skillet and bring the gravy to a gentle simmer.
- Reduce the heat, cover, and simmer for 15–20 minutes, turning the sausages occasionally, until cooked through and the gravy has thickened.
- Stir in the frozen peas during the final 3–4 minutes of cooking.
- Taste and adjust the seasoning with salt and black pepper.
To Serve
Spoon a generous portion of creamy mashed potatoes onto each plate. Top with the curried sausages and plenty of the rich onion curry gravy. Sprinkle with fresh parsley and serve hot.
