Pineapple Coconut Dream Cake

Ingredients

For the Cake

  • 1 package yellow cake mix
  • Ingredients required on the cake mix package, usually eggs, oil, and water
  • 1 can (20 oz) crushed pineapple with its juice
  • 1 cup sweetened shredded coconut

For the Creamy Topping

  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 cup cold milk
  • 1 container (8 oz) whipped topping, thawed

Instructions

  1. Prepare the Cake:
    Preheat the oven according to the temperature listed on the yellow cake mix package. Grease and lightly flour a 9×13-inch baking pan.
  2. Prepare the cake batter according to the package directions. Pour the batter into the prepared pan and spread it evenly.
  3. Bake according to the package instructions, until the cake is golden and a toothpick inserted into the center comes out clean.
  4. Remove the cake from the oven and let it cool slightly.
  5. Add the Pineapple:
    While the cake is still warm, spread the crushed pineapple evenly over the top, including some of the pineapple juice. Allow the cake to cool completely.
  6. Make the Creamy Topping:
    In a medium bowl, whisk the instant vanilla pudding mix with the cold milk until smooth and slightly thickened.
  7. Gently fold the thawed whipped topping into the pudding mixture until completely combined and creamy.
  8. Spread the pudding mixture evenly over the cooled pineapple layer.
  9. Sprinkle the sweetened shredded coconut evenly over the top.
  10. Refrigerate the cake for at least 2 hours, preferably overnight, to allow the layers to set and the flavors to blend.
  11. Slice, serve chilled, and enjoy!

  • For the best flavor, refrigerate the cake overnight.
  • Toast the coconut lightly before sprinkling it on top for a deeper, nuttier flavor.
  • Make sure the cake is completely cool before adding the creamy pudding layer.
  • Store leftovers covered in the refrigerator for up to 3–4 days.
