Roasted Chicken with Caramelized Apples & Sweet Potatoes, Brie, Cranberries & Walnut Honey
A cozy fall-inspired roasted chicken dinner that combines juicy, savory chicken with caramelized apples, tender sweet potatoes, creamy Brie, tart cranberries, and crunchy walnuts drizzled with honey. It’s a beautiful centerpiece for a family dinner or holiday table.
Ingredients
For the Chicken
- 4 bone-in, skin-on chicken thighs or breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- ½ teaspoon smoked paprika
For the Sweet Potato & Apple Bake
- 2 large sweet potatoes, peeled and cubed
- 2 apples, cored and sliced
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 tablespoons brown sugar
- 1 teaspoon cinnamon
- ½ teaspoon salt
- ½ cup dried cranberries
- 4 oz Brie cheese, cut into small pieces
- ½ cup walnuts, roughly chopped
- 2 tablespoons honey
- 1 teaspoon fresh lemon juice
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken: Pat the chicken dry and rub it with olive oil, salt, black pepper, garlic powder, thyme, and smoked paprika.
- Start the sweet potatoes: Place the cubed sweet potatoes in a large baking dish. Toss with olive oil, salt, cinnamon, and brown sugar.
- Add the chicken: Arrange the seasoned chicken over or beside the sweet potatoes. Roast for about 25 minutes.
- Caramelize the apples: Meanwhile, melt the butter in a skillet over medium heat. Add the sliced apples and cook for 4–6 minutes, stirring occasionally, until lightly golden and caramelized. Add the lemon juice and remove from the heat.
- Combine: After the chicken has roasted for 25 minutes, carefully add the caramelized apples and dried cranberries to the baking dish.
- Add Brie and walnuts: Scatter the Brie pieces and chopped walnuts over the sweet potatoes and apples. Drizzle everything with honey.
- Finish roasting: Return the dish to the oven and roast for another 15–20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the sweet potatoes are tender.
- Rest and serve: Let the chicken rest for 5 minutes before serving. Spoon the caramelized apples, sweet potatoes, cranberries, melted Brie, and honey-glazed walnuts around the chicken.
Tip: For extra caramelization, broil the dish for 1–2 minutes at the end, watching carefully so the walnuts and honey don’t burn.
