Slow Cooker Pork Chops with Savory Stuffing

Tender, juicy bone-in pork chops slow-cooked over a flavorful, savory stuffing. This easy comfort-food dinner is perfect for a cozy family meal.

Ingredients

  • 3–4 bone-in pork chops, about 1 inch thick
  • 1 box (6 oz) seasoned stuffing mix
  • 1 ½ cups chicken broth
  • 1 small onion, diced
  • 2 celery stalks, diced
  • 4 tablespoons butter, melted
  • 1 teaspoon dried sage
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. Prepare the stuffing: In a bowl, combine the stuffing mix, diced onion, celery, melted butter, chicken broth, sage, thyme, rosemary, and garlic powder. Mix until the bread is evenly moistened.
  2. Season the pork chops: Pat the pork chops dry and season both sides generously with salt and black pepper.
  3. Assemble the slow cooker: Lightly grease the slow cooker and spread the stuffing mixture evenly across the bottom.
  4. Add the pork chops: Place the seasoned pork chops on top of the stuffing. Drizzle them lightly with olive oil.
  5. Cook: Cover and cook on LOW for 4–5 hours, or until the pork reaches an internal temperature of 145°F (63°C).
  6. Rest and serve: Let the pork chops rest for 5 minutes before serving. Spoon the flavorful stuffing onto each plate and top with a pork chop.

Tips

  • For extra flavor, sear the pork chops in a hot skillet for 2–3 minutes per side before placing them in the slow cooker.
  • Avoid overcooking the pork, as lean pork chops can become dry.
  • A little extra chicken broth can be added if you prefer softer, more moist stuffing.
