Best Ever Easy Vegetable Beef Soup
A hearty, comforting soup packed with tender beef, wholesome vegetables, and a flavorful broth. It’s an easy one-pot meal made with simple ingredients and perfect for a cozy family dinner.
Ingredients
- 1½ lbs (700 g) beef stew meat, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 3 medium potatoes, peeled and diced
- 1 cup green beans, cut into pieces
- 1 can (14.5 oz) diced tomatoes
- 6 cups beef broth
- 2 tbsp tomato paste
- 1 tsp Italian seasoning
- 1 tsp salt, or to taste
- ½ tsp black pepper
- 1 bay leaf
- 1 cup frozen peas
- 2 tbsp fresh parsley, chopped
Instructions
- Brown the beef: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the beef and cook for 5–7 minutes, turning occasionally, until browned on all sides.
- Add the aromatics: Add the chopped onion and cook for 2–3 minutes until softened. Stir in the garlic and cook for about 30 seconds.
- Build the soup: Add the carrots, celery, potatoes, green beans, diced tomatoes, tomato paste, beef broth, Italian seasoning, salt, pepper, and bay leaf. Stir well.
- Simmer: Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 45–60 minutes, or until the beef becomes tender and the vegetables are cooked through.
- Add the peas: Stir in the frozen peas during the last 5 minutes of cooking.
- Finish: Remove the bay leaf. Taste and adjust the salt and pepper as needed.
- Serve: Ladle the hot soup into bowls and garnish with fresh parsley. Serve with crusty bread for a complete and comforting meal.
