Fall Caramel Apple Pecan Cookies

Soft, chewy cinnamon-spiced cookies loaded with tender apples, toasted pecans, and a sweet caramel drizzle in every cozy bite!

Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 1/2 cups finely diced apples
  • 1 cup pecans, chopped and lightly toasted
  • 1/2 cup caramel sauce, for drizzling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs and vanilla extract, then mix until smooth.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Gently fold in the diced apples and toasted pecans.
  7. Scoop spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
  8. Bake for 11–14 minutes, until the edges are lightly golden and the centers are still soft.
  9. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack.
  10. Once cooled slightly, drizzle generously with sweet caramel sauce.
