Creamy Veal Paupiettes in White Wine Sauce

Tender veal paupiettes gently simmered in a rich, creamy white wine sauce make an elegant and comforting French-inspired meal. The sauce is smooth, flavorful, and perfect served with mashed potatoes, rice, pasta, or crusty bread.

Ingredients

  • 4 veal paupiettes
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 cup chicken or beef broth
  • 3/4 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 1 teaspoon all-purpose flour, optional
  • Salt and black pepper, to taste
  • 1 teaspoon dried thyme or a few sprigs of fresh thyme
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat the olive oil and butter in a large skillet or Dutch oven over medium heat.
  2. Season the veal paupiettes lightly with salt and black pepper. Add them to the hot pan and brown on all sides until nicely golden. Remove the paupiettes and set aside.
  3. In the same pan, add the chopped onion and cook for 3 to 4 minutes until softened. Add the garlic and cook for another minute.
  4. Sprinkle in the flour, if using, and stir well for about 30 seconds.
  5. Pour in the white wine and scrape the bottom of the pan to release all the flavorful browned bits. Let the wine simmer for 2 to 3 minutes.
  6. Add the broth, Dijon mustard, and thyme. Return the veal paupiettes to the pan.
  7. Cover and simmer over low heat for about 30 to 40 minutes, or until the veal is tender and cooked through.
  8. Remove the lid and stir in the heavy cream. Simmer gently for another 5 to 10 minutes until the sauce becomes smooth, rich, and slightly thickened.
  9. Taste and adjust the seasoning with salt and black pepper.
  10. Garnish with freshly chopped parsley and serve hot with plenty of the creamy white wine sauce.
