Banana Bread Cake with Cream Cheese Frosting

Ingredients
For the Banana Cake
- 3 very ripe bananas, mashed
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 cup sour cream or plain Greek yogurt
For the Cream Cheese Frosting
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1–2 tablespoons heavy cream or milk, if needed

Instructions
1. Prepare the Cake
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan and line it with parchment paper if desired.
In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth. Add the mashed bananas, eggs, vanilla extract, and sour cream. Mix until everything is well combined.
In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
Gradually add the dry ingredients to the banana mixture. Stir gently just until combined. Do not overmix, as this can make the cake dense.
Pour the batter into the prepared pan and spread it evenly.
Bake for 25–32 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
Allow the cake to cool completely before frosting.
2. Make the Cream Cheese Frosting
Beat the softened cream cheese and butter together until smooth and creamy.
Gradually add the powdered sugar while mixing on low speed. Add the vanilla extract and beat until light and fluffy.
If the frosting is too thick, add 1 tablespoon of heavy cream or milk at a time until you reach your desired consistency.
3. Frost the Cake
Spread the cream cheese frosting generously over the completely cooled banana cake.
Top with chopped walnuts or pecans and a light sprinkle of cinnamon if desired.
For the best flavor and texture, refrigerate the frosted cake for about 30–60 minutes before slicing.
