Creamy Jalapeño Corn Dip

Ingredients
- 8 ounces cream cheese, softened
- 1/2 cup sour cream
- 2 cups sweet corn, drained
- 1–2 fresh jalapeños, finely chopped
- 1/2 cup green onions, finely chopped
- 1 cup shredded Monterey Jack cheese
- 1/2 cup shredded cheddar cheese
- 2 cloves garlic, minced
- 1/2 teaspoon seasoned salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon cayenne pepper, optional
- 2 tablespoons chopped fresh cilantro, optional

- Chopped green onions
- A sprinkle of red pepper flakes

Instructions
1. Prepare the oven
Preheat your oven to 400°F (200°C). Lightly grease a small baking dish or oven-safe skillet.
2. Make the creamy base
In a large mixing bowl, add the softened cream cheese and sour cream. Beat or stir until smooth and creamy.
3. Add the vegetables
Stir in the sweet corn, chopped jalapeños, and green onions.
Add the minced garlic, seasoned salt, black pepper, paprika, and cayenne pepper if using.
4. Add the cheese
Fold in the Monterey Jack and cheddar cheese until everything is evenly combined and well coated in the creamy mixture.
5. Bake
Transfer the dip to the prepared baking dish and spread it evenly.
Bake uncovered for 20–25 minutes, or until the dip is hot, creamy, and bubbling around the edges.
For an extra golden, cheesy top, broil for 1–2 minutes at the end, watching carefully so it doesn’t burn.
6. Garnish
Remove from the oven and let the dip rest for about 5 minutes.
Top with fresh jalapeño slices, chopped green onions, and a light sprinkle of red pepper flakes.
