Slow Cooker Meatloaf Patties & Potatoes
Ingredients
For the Meatloaf Patties
- 2 lbs lean ground beef
- 1 cup Italian-style breadcrumbs
- 2 large eggs
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
For the Potatoes
- 2 lbs baby potatoes, halved
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
For the Sauce
- 1 cup ketchup
- 1/4 cup brown sugar
- 2 tablespoons Worcestershire sauce
- 1 tablespoon yellow mustard
Instructions
- Prepare the meatloaf patties: In a large bowl, combine the ground beef, breadcrumbs, eggs, onion, garlic, salt, pepper, Italian seasoning, and paprika. Mix gently until everything is well combined.
- Shape the patties: Divide the mixture into 6–8 equal portions and shape each one into a thick oval patty.
- Prepare the potatoes: Place the halved baby potatoes in the bottom of your slow cooker. Toss with olive oil, garlic powder, salt, and black pepper.
- Make the sauce: In a small bowl, whisk together the ketchup, brown sugar, Worcestershire sauce, and mustard.
- Assemble: Arrange the meatloaf patties over the potatoes. Spoon the sauce generously over each patty.
- Slow cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the patties are cooked through and the potatoes are tender.
- Serve: Carefully transfer the meatloaf patties and potatoes to plates. Spoon some of the delicious sauce from the slow cooker over the top and serve hot.
