Ground Beef Zucchini Casserole
A hearty and comforting casserole made with tender zucchini, savory ground beef, rich tomato sauce, and plenty of melted cheese. Perfect for an easy family dinner!
Ingredients
- 3 medium zucchini, sliced into thin rounds
- 1 pound (500 g) ground beef
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup diced tomatoes, drained
- ½ cup tomato sauce
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
- Slice the zucchini into thin rounds or half-moons.
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and cook for 2 to 3 minutes until softened.
- Add the ground beef and cook until browned, breaking it apart as it cooks.
- Drain any excess grease from the pan.
- Stir in the garlic, diced tomatoes, tomato sauce, Italian seasoning, garlic powder, onion powder, salt, and black pepper.
- Allow the mixture to simmer for 3 to 5 minutes.
- Add the zucchini and gently stir everything together.
- Transfer the mixture to the prepared baking dish.
- Sprinkle the cheddar cheese and mozzarella cheese evenly over the top.
- Bake for 25 to 30 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
- Allow the casserole to rest for 5 minutes before serving.
- Garnish with fresh parsley if desired.
