 Ground Beef Zucchini Casserole

A hearty and comforting casserole made with tender zucchini, savory ground beef, rich tomato sauce, and plenty of melted cheese. Perfect for an easy family dinner!

Ingredients

  • 3 medium zucchini, sliced into thin rounds
  • 1 pound (500 g) ground beef
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes, drained
  • ½ cup tomato sauce
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Slice the zucchini into thin rounds or half-moons.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Add the onion and cook for 2 to 3 minutes until softened.
  5. Add the ground beef and cook until browned, breaking it apart as it cooks.
  6. Drain any excess grease from the pan.
  7. Stir in the garlic, diced tomatoes, tomato sauce, Italian seasoning, garlic powder, onion powder, salt, and black pepper.
  8. Allow the mixture to simmer for 3 to 5 minutes.
  9. Add the zucchini and gently stir everything together.
  10. Transfer the mixture to the prepared baking dish.
  11. Sprinkle the cheddar cheese and mozzarella cheese evenly over the top.
  12. Bake for 25 to 30 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
  13. Allow the casserole to rest for 5 minutes before serving.
  14. Garnish with fresh parsley if desired.
