Cheesy Ground Beef and Rice Casserole
Ingredients
- 1 lb (450 g) ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup uncooked long-grain white rice
- 2 cups beef broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (8 oz) tomato sauce
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1½ cups shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 1 tablespoon olive oil
- Fresh parsley, for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Heat the olive oil in a large oven-safe skillet over medium heat. Add the ground beef and diced onion. Cook for 5–7 minutes, breaking up the beef with a spoon, until browned and the onion is softened.
- Add the minced garlic and cook for another 30 seconds.
- Stir in the uncooked rice, beef broth, diced tomatoes, tomato sauce, Italian seasoning, paprika, salt, and black pepper.
- Bring the mixture to a gentle simmer. Cover the skillet tightly with a lid or aluminum foil and cook for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.
- Remove the lid and stir everything together. Sprinkle the cheddar and mozzarella evenly over the top.
- Transfer the skillet to the oven and bake uncovered for 10–15 minutes, until the cheese is completely melted, bubbly, and lightly golden.
- Let the casserole rest for 5 minutes before serving. Garnish with fresh parsley and enjoy!
Tip: You can add bell peppers, corn, mushrooms, or black beans for extra flavor and texture.
