Ingredients

For the Meatloaf

  • 2 lbs (900 g) lean ground beef
  • 1 cup plain breadcrumbs
  • 1 small onion, finely diced
  • 2 large eggs
  • 1/2 cup milk
  • 2 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper

For the Brown Sugar Glaze

  • 1/2 cup packed brown sugar
  • 1/2 cup ketchup
  • 1 tbsp yellow mustard
  • 1 tsp apple cider vinegar

Instructions

  1. In a large bowl, combine the ground beef, breadcrumbs, onion, eggs, milk, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix gently until just combined.
  2. Shape the mixture into a loaf that will fit inside your slow cooker.
  3. Place the meatloaf in the slow cooker. If desired, place it on a sheet of aluminum foil with the sides folded up slightly to make lifting it out easier.
  4. In a small bowl, whisk together the brown sugar, ketchup, mustard, and apple cider vinegar.
  5. Spread half of the glaze over the meatloaf.
  6. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the internal temperature reaches 160°F (71°C).
  7. During the last 20–30 minutes of cooking, spread the remaining glaze over the meatloaf.
  8. Carefully remove the meatloaf from the slow cooker and let it rest for 10 minutes before slicing.
