A hearty, comforting meal made with just five simple ingredients! Tender potatoes, savory ham, and a rich, creamy sauce slowly cook together until perfectly delicious. This easy slow cooker recipe is perfect for busy weeknights or cozy family dinners.
Ingredients
- 2 pounds russet potatoes, peeled and thinly sliced
- 2 cups cooked ham, diced
- 1 small onion, thinly sliced
- 2 cans (10.5 ounces each) condensed cream of mushroom soup
- 2 cups shredded sharp cheddar cheese
Instructions
- Lightly grease the inside of your slow cooker.
- Arrange one-third of the sliced potatoes in an even layer on the bottom.
- Top with one-third of the diced ham, a few onion slices, a spoonful of cream of mushroom soup, and a handful of shredded cheddar cheese.
- Repeat the layers two more times until all ingredients are used, finishing with the remaining cheese on top.
- Cover and cook on Low for 6–7 hours or on High for 3–4 hours, until the potatoes are tender when pierced with a fork.
- Let the casserole rest for about 10 minutes before serving to allow the sauce to thicken.
Tips
- Slice the potatoes evenly so they cook at the same rate.
- For extra flavor, add a pinch of black pepper, garlic powder, or paprika.
- If you like a creamier texture, stir in ½ cup of sour cream during the last 30 minutes of cooking.
