A hearty, comforting meal made with just five simple ingredients! Tender potatoes, savory ham, and a rich, creamy sauce slowly cook together until perfectly delicious. This easy slow cooker recipe is perfect for busy weeknights or cozy family dinners.

Ingredients

  • 2 pounds russet potatoes, peeled and thinly sliced
  • 2 cups cooked ham, diced
  • 1 small onion, thinly sliced
  • 2 cans (10.5 ounces each) condensed cream of mushroom soup
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. Lightly grease the inside of your slow cooker.
  2. Arrange one-third of the sliced potatoes in an even layer on the bottom.
  3. Top with one-third of the diced ham, a few onion slices, a spoonful of cream of mushroom soup, and a handful of shredded cheddar cheese.
  4. Repeat the layers two more times until all ingredients are used, finishing with the remaining cheese on top.
  5. Cover and cook on Low for 6–7 hours or on High for 3–4 hours, until the potatoes are tender when pierced with a fork.
  6. Let the casserole rest for about 10 minutes before serving to allow the sauce to thicken.

Tips

  • Slice the potatoes evenly so they cook at the same rate.
  • For extra flavor, add a pinch of black pepper, garlic powder, or paprika.
  • If you like a creamier texture, stir in ½ cup of sour cream during the last 30 minutes of cooking.
